High Protein, Low Sodium, … How?!
If you live with cirrhosis, you know breakfast meat can feel like a lost cause 🥓🚫. Giving up traditional sausage or bacon while increasing egg intake felt like a lose lose.
When I sick, one of the very first foods I was told would help was eggs. Doctors and nutritionists love them because they are highly digestible, packed with omega fatty acids, and provide excellent nutrition.
There was just one glaring problem. For my entire life, eggs meant (usually turkey) bacon or sausage. And there was always a pile of premade ones in the freezer. I was used to grabbing one, tossing it in the microwave. Eggs seemed easy.
Then came the reality check. Processed breakfast meats are absolute sodium landmines. Store bought tortillas and heavy cheese only add to the tax. What used to be a go to was now the enemy.
Fortunately, this recipe cracks the code. It delivers that exact same nostalgic, microwave-ready convenience, but completely liver friendly By combining lean poultry with smart, low-sodium spices and sneaking in high-fiber vegetables, you get a high-protein breakfast that nourishes your liver.

12 Large Eggs
1 lb Lean Ground Turkey (93-94% lean)
1½ cups Cauliflower Rice (fresh or frozen)
½ cup Onion
½ cup Bell Pepper, diced
½ cup Shredded Cheese (lowest sodium)
"Sausage" Spice Blend (No Sodium): ½ tsp each of Rubbed Sage, Thyme, Garlic Powder, Onion Powder, Smoked Paprika, Black Pepper. Add a drizzle of maple syrup for sweetness.

½ cup Roasted Green Chilies: Diced, with absolutely no added salt (Hatch green chilies are my favorite).

My family uses a massive amount of green chili, and it is the ultimate way to level up this recipe. Standard store-bought hot sauces and salsas carry a heavy sodium penalty that can quickly break your daily salt budget.
Instead of hot sauce, we use roasted Hatch green chilies with absolutely no added salt.
Hatch green chilies are naturally low in sodium, and packed with vitamin C. By adding a spoonful of these roasted, diced chilies directly into your egg scramble or layering them right into the burrito during assembly, you get a massive, smoky flavor boost that completely replaces the need for salt.
You can roast them yourself or find them frozen in most grocery stores.

Step 1:

Heat 1 tbsp of olive oil in a large skillet over medium-high heat.

Toss your diced onions and bell peppers directly into the pan, sautéing for 2 to 3 minutes.
Stir in the cauliflower rice and cook for another 4 to 5 minutes.
Pro Tip: Ensure all moisture completely evaporates during this step to prevent soggy burritos later. Remove the mixture and set it aside.
Step 3:
The Low-Heat Soft Scramble
Whisk the 12 eggs thoroughly.
In a clean pan over medium-low heat, gently scramble the eggs, pushing them slowly with a spatula to create soft curds.
